Try to visit a town and a village, and just see what is there.
Most towns and many smaller places have a local museum, you can walk around the place or take a hike into the mountains, visit the local mansion or castle.
And make sure you visit a local pub. Nothing like a local in a small town.

In Ireland I was lucky enough to see a tour advertised with the local story teller, great day, he took us to places where tourist normally do not come because they do not know about the area and buses can not get there.

I'd go tour castles and villages that look like something out of a story book and sample the local cuisine. I'd also just take in the scenery and meet the locals. I'd also go searching for my family roots.

I know what I WOULDN'T do, and that's eat Haggis...

It's a traditional Scottish dish that's made with sheep heart, liver and lungs and boiled inside of a sheep's stomach (how, I don't want to know), for about an hour...*shudder*
