What happens to men when they die? They don't sail to valinor do they?

They don't "sail" to Valinor. They can't if they are still alive. Their true fate is unknown even to the Valar and maybe only Manwe and Mandos know the true fate of men.

For some odd reason; men can pass through the Halls of Mandos like Beren who did not wish to depart the world until he said goodbye to Luthien.

They are accepted into the Halls of Mandos; only Elves sail to Valinor if they are alive and tired of life in Arda. Elves who die also go to the Halls of Mandos.
