I can paint but I dont like people looking at my art

Hmm...the internet may help.
Just a suggestion:
Would you mind taking a picture of your paintings and posting on deviantart.com? That would be a great to have other people look at your art with having to show your face.
Same thing with music. record yourself. slap it on youtube, last fm or some other song sharing website. see how people like it.
That way you have good opportunity to see how people view your work and maybe view yourself as well.

I can sing really well when I'm by myself but as soon as
someone walks by or something then I freeze up
( people have heard me before so that's how I know I don't
suck )

I can fart The Hills Are Alive With The Sound of Music,and I do it in front of people all the time,so I would have to say no.

I've got the singing thing, because I feel if I sing in my full voice like people will think I'm intentionally showing off. But I do it anyway.

I can write my own songs,sing and play them,which I used to do in front of crowds,but I handed the reigns over to my 17 year old son(singing),but I'll stay play guitar.I'm my own worst critic.

Nah, I embrace and flaunt them :)
For example, art -- people at school see it as well as when we have the annual art gallery event.
Horseback riding - I show infront of many judges, competitors and viewers :)
