Or would it be like material in that I could cut a certain shape out and it won't unravel.

If it has been well felted/fulled (with soap, not detergent) you should be able to cut it to shape without unraveling the stitching. You might get some "whiskers" from the cut fibers at the edges though.

Because felting causes the fibers to fuse to eachother, the fabric shouldn't unravel when cut. Hope this helped, good luck.

You'd have to have some solid way to seal the edges somehow. Otherwise, knit will unravel, felted or not. Can't you just knit it into the correct shape and felt it and go from there?

You could iron a piece of interfacing to it before you cut, just to make sure.
