There are a lot of books by George MacDonald, a Scottish author who influenced C.S. Lewis, that were not made into movies. For instance Malcolm or Mary Marston, both of which can be read online (along with others of his) at http://www.online-literature.com/george-macdonald/
English author, Ann Radcliffe, wrote The Mysteries of Udolpho (a classic Gothic novel) which has never, to the best of my knowledge, been made into a movie. http://www.online-literature.com/ann-radcliffe/
The English writer, Anthony Trollope, wrote a lot of novels that haven't been made into movies like The Duke's Children. http://www.online-literature.com/anthony-trollope/
There are many others. You can look through a list of authors http://www.online-literature.com/author_index.php and check their works against IMDB's movie lists http://www.imdb.com/ to see if a specific work was made into a movie.
I hope this helps.

I liked this trilogy i read,I don't really know if it is a well known book, but I'm pretty sure it's never become a movie.it's fiction ,pure fantasy, not so original(nothing is after the Lord of the Rings in my opinion),but a very good story line and in-depth characters. It;s the author Guy Gavriel Kay and the book's name is The Fionavar Tapestry. He is Canadian i think.

I am currently reading The Fall by Albert Camus. Its pretty good, and I don't think it has been made into a film.
