Who says they can't?

They can analyse and calibrate objects for a distance after that the instruments arnt sensitive enough- dont forget they can see BILLIONS of light years away now !
Maybe in the future with hubble like telescopes they will see how big the universe is.
Only this week they have found 'missing' matter they calculated was there but couldnt 'see' it

well, the universe is ever expanding at an extremely rapid rate, and telescopes aren't advanced enough to see that far. Our telescopes can only see millions of light years, when there could be a trillion or maybe even a quadrillion light years in the universe.

it's constantly expanding, so there's not a good definition of where the "edges" are. Also there may be other stars that are so far away and are moving away from us so fast, the light that reaches us from them which tells us they exist may not be detectable.
