For the same reasons chickens and other birds swallow grit... crocs don't chew, gastroliths help grind up food when it reaches the stomach.

They're eating stones to chew all the stuff they swallow, but it could have other roles, it could act like a ballast when they dive if you're really interested you should read Wings Oliver works on the gastrolith!
