When driving stick shift and braking to stop fully at an intersection:

let's say you're is in 5th gear and you sees up ahead that you will have to stop at a red light. Can you simply brake until the intersection and disengage the clutch just before you stop?

And when you've disengaged the clutch, can you just throw it into 1st gear at the light? Or do you have go through 4 3 2 first?

you don't have to downshift, but it's easier on your brakes if you do.:)

Press the cutch in before the engine starts to "chug" around 20 mph.

After stoping, shift to first, and off you go on your merry way.
