If your question is why there are so many stars and galaxies are there then my reply will be everything is there for us only.

I explain why. Imagine if we are left out with one planet less, say Venus, in our solar family. Then it would definitely affect rotation, gravitation and distance between earth and sun etc., therby our humanrace.
Similarly because our solar family itself is rotating/travelling in the Milky way,(their motion controlled by the remaining stars and their families of Milky way), absence of even one star would affect the pattern of its travelling and therby affecting the earth also. It can be extrapolated to other galaxies also.
Having humanrace in earth is a very very rare phenomenon which had occured due to choicest of choicest incidents/accidents happened during the earth's whole history of period. For example if the earth did not tilt 23 1/2 degrees there would not have been different seasons and there would be no humanbeings. Like that the complete evolution of earth suggests us so many variables due to which only we are now here.
Hence it will not be surprised that in the whole Universe there may not be any humanbeing or equivalent and we may be alone also.
It may be, God wanted us to be here and hence he made the rest of the UNIVERSE.

No stars in the universe? Really? We haven´t been looking at the same night sky. I see thousands on any cloudless night. And how can you say there is no life out there? There are hundreds of billions of stars in a galaxy. Each star could very well have atleast one planet. Now take a look at this picture that the HST took of pretty much a random strip of sky:

Besides the big spiral galaxy in the foreground EVERY LITTLE DOT is a whole other galaxy. Try counting them. Multiply that by 250 billion. The number you come up with is a reasonable number of planets in this one picture. Now ask your question once more.

The Universe Creation is realy a fine work of Art. That is why there are so many Stars in the Milky way and the Universe .
If you consider anything that moves as having life, then Stars have life in the same way Atoms have life.
