There are grooves across sidewalks and spaces between sections on bridges and roadways. The 2nd answer is correct about the sidewalk grooves, which are called "control joints" (see ref.). Better to have cracking occur where you can't easily see it than all over the surface.
The spaces and joints are primarily to accommodate expansion/contraction due to temperature changes, also they allow independent motion to help distribute large wind and weight loads more evenly.

This is to allow space for expansion of bridges, roads and sidewalks on a hot day. If there are no "cracks", the roads will crack and gets damaged when it tries to expand.

The spacing left in construction of sections of bridge, road, sidewalk etc are for allowance for the thermal expansion and shrink as per climatic variation and they are also cushioned with elastomers of sufficient strength with strong bonding as intermediate layer between sections! Thermal expansion of all the materials including all types of construction materials like cement, plaster, wood are also understood and measures are taken for the same to avoid natural cracking1

the cement contracts and restricts when either cold or hot, and it needs to "breathe".. Usually in sidewalks you'll see a black spongy line between, that acts like a shock absorber, in bridges you'll see strips of interlocking links going across.. the same effect, it allows the cement to breathe, this prevents it from cracking...

In sidewalks and large cement areas it is accepted that the concrete will crack, the grooves are put in so it will crack along the lines and still look neat and will not buckle.

Imagine repairing a one piece bridge. Imagine how hard that would be. It's easier for the builders to smooth down the cement in pieces than in one giant piece.
