I'm italian from Italy and this kind of questions makes any sense to me. If you think Hollywood movies like The godfathers, dramas like The sopranos or cartoons like Family guy represent Italians, you are making a big mistake. It's offensive to me that Americans think to imitate these mobsters' movies mean to act like an Italian.
Italy is a new country composed of several cultures, Italian is a nationality, each region of Italy has a diverse culture, tradition, way of acting and thinking.
Americans love the worst part of the country, the mafia which comes from the south. Don't get me wrong, there are plenty of honest southern Italians. It's true many of them brought mafia in America though.
All Americans know is about southern Italians, to the point they use Sicilian actors to play northern Italians, as in the movie Unbroken where the Venetian Louis Zamperini's father is played by a Sicilian who speaks Sicilian. No comment...
There is no way to act like an Italian. Some stupid and rude Italian in Italy thinks all Italians act like him/her and if you ask them, you'll get their answer. As far as I'm concerned I'm very polite, kind, I'm not loud at all, I talk with hands the same way English do, I'm quiet and I'm never late.
Auguri.

Well, there's sterotypical mob type Italian that you can see in any Soprano's espisode, Godfather film, etc... How about imitating someone in your family? Do you have an uncle or grandfather from the old country that you visit or that has moved here? That doesn't even matter as long as they've retained their Italian essence and you can pick up on that. Pulling from your own real life experiences and people you know is a good resource. So Uncle Sal becomes a character you can pull out from time to time :-) He doesn't have to know... He doesn't even have to be your Uncle, got any Italian friends?
