technically it will still smell. by the virtue that it stinks, and it can be smelled.
but if you are no where near the forest or the cheese then, the stinky cheese would not stink because you cannot smell the stinky cheese.

Man you just made my head hurt!! Then I had to go get a cup of coffee--and now I'll be up all nite. Okay the squirrel in the tree not only heard but felt the tree fall--and now he smells the stinky cheese, so he's gonna snatch it up and run to another tree and hope there's more stinky cheese under that one on his way up and pray to the great beyond that this tree doesn't fall (I know--you said nothing about a tree), and I guess the squirrel would be "someone"----and---OMG!!!

This question assumes that forests and smelly cheeses (you said it was smelly) exist without anyone to see them, but that the smell possibly can't without someone to smell it.
Mixed logic is always the downfall of poor reasoning, as Berkeley didn't live to discover.

If a tree falls down in the forest and nobody is around to hear , does it still make a sound?
If a murder is committed and the killer never gets caught, was it a murder?
If the oranges are orange but no one is there to see them, are they still orange?
If is daytime but no one is there to see it, is it really daytime?
If I'm drinking kool aid and it tastes like water, is it really kool aid?
If i go to McDonalds and order a Whopper, am I still in Mcdonads?
