A theory will change or be replaced when new information, data, observations or hypotheses are presented, investigated, tested, and verified by independant scientists.
Sceintific theories are therefore always being corrected and updated.
If a theory is incomplete or no longer correct, then it must be revised or replaced so that science and humanity can continue to learn and expand our knowledge.
So originally the Earth was flat, then science proved it was a sphere, then more science proved it was an oblate spheroid.
Originally, the Earth was the centre of the universe.
Then science proved the Earth orbited the sun and the sun was part of the Milky Way galaxy.
Then science proved that the other fuzzy nebulas in the sky were galaxies as well, expanding our view of the universe from one small galaxy to (our current understanding) a huge place 93 billion light years in diameter.

Because different scientist try the experiment and find different conclusions
If the hypothesis isn't correct then of course the theory would change...
Why wouldn't it change would be a better question.
If it didn't change, then would we really be advancing in technology?

First you have to realize that we are in an unknown world and some people are very curious about anything, then they make and idea trying to explain it but they do not have enough knowledge logically they can have mistakes. The idea then change. That is why, we do not know everything. We are just discovering this world.
