Cellulose is neither an organism or enzyme.
It is is a large carbohydrate(polysaccharide), made up of glucose beta rings.

Cellulose is a polysaccharide of glucose molecules strung together by their "heads," which are bonded by linkages called "beta," to the end OH's of the glucose molecules ahead of them. This distinguishes them from starches, which are bonded by "alpha" linkages. The difference is that cellulose can form cotton and wood, which animals cannot digest, whereas alpha linkages give rise to starch, which animals can digest and use. Only plants and bacteria have cellulases, which are enzymes that can digest cellulose.
