If so, please tell me who you think were the "winners" and "losers" of the book?

Or who won the struggle and who lost the struggle?

The "losers" (i.e. the strikers) won and the "winners" (i.e. the owner/capitalists) lost.
As in a lot of Steinbeck's works, while the individuals
on the side of right and justice may have "lost" (e.g. Jim Nolan is senselessly murdered) yet the cause they were fighting for has moved towards realization due to their efforts.
