I'm no expert on duck physiology, but I don't think a one-legged duck will swim in circles for long. Predators tend to select the weakest animals for dinner, so the poor duck probably wouldn't last long in the wild.

Just as with a one-oared-boat, there would be a tendency to swim in circles. The difference is, the duck has a brain. It will figure out a way not to go in circles. I haven't seen a duck with one leg, but I've seen enough animals and birds, handicapped and not, to be able to predict this.

No! The duck will correct for the missing leg and still be able to swim fairly straight. As with any animal missing a leg, they "adapt" to the situation.
