After about 12, mathematicians usually just call them n-gons, as in 21-gons.
But there are names for theses polygons if you really want to know.
For a 21-sided figure there are actually two acceptable names:
icosikaihenagon or icosihenagon
kai literally means 'and' but people debate whether or not the kai is necessary.

I was always taught that there are special names for all two-dimensional figures with three sides up to ten, and then another special name for a twelve sided figure. Also, the same rules apply to three-dimensional figures for the most part. If the shape doesn't have the specified sides, like in this case, then to name it one uses the word for the number in the language of the geographic area one is living. So that means that a 21-sided shape would be a twenty-one-agon. It wouldn't surprise me though if there were multiple correct answers to your question because it's such a rare occurrence to see a twenty-one-sided-shape.

icosikaihenagon, icosi means 20, henagon means 1. Its is derived from Greek numerals. Most people prefer to call it a 21-gon.
