You should use antifreeze (which by the way is the same thing as coolant) all year round not just in the winter. For one because the antifreeze keeps the engine cool in the summer. Meaning if you use water it will boil causing the engine to overheat, and in the winter it will freeze while the engine is off and could crack your block. Not to mention you will rust your engine using water and you won't be lubricating the water pump causing premature failure. Just to mention a few of the problems water will cause.

Because, when water freezes (at 32 degrees fahrenheit) it expands. The expansion will crack the engine block, the radiator and the hoses which will render your car inoperable and cost you a large amount of money. When water is mixed 50-50 with ethelyne glycol (anti-freeze) it lowers it's freezing point to way below zero degrees and prevents your engine from being ruined. The anti-freeze also has rust preventives in it and should be run year around, not just on cold winter days. Rust will also destroy your engine.

antifreeze mixed with water lower the freezing point. If your radiator freezes it will split it open.
