Make it as wide and as long as you want. Either knit on knit or k one row and p the next. Does this work or are you looking for sonething with a pattern?

There are hundreds, if not thousands, of free dishcloth knitting patterns on the web. (For a dish towel, just repeat the rows until you like the length.)

there is free design software at greatknitdesigns.com called skirts / afghans that allows you to create patterns for dishcloths etc - go to downloads and get skirts program. I don't know if this is what you want but it may help.
