Just go and do it, I went out to nz in the late 90's and bought a 1978 kawasaki kz400 twin, rode it round for three months and sold it for what I paid for it when I went home.
If you buy a bike in nz it has to have a roadworthiness certificate and you pay a registration fee that includes third party insurance. This means you are legal to ride it straight away.
I flew into Auckland, got in a taxi and asked the driver where I could pick up a cheap bike, twenty minutes later I'd bought it.
Just get on with it!

I don't know about the freight costs but would imagine it would be around 500gbp each way from UK to OZ if you take the bike to a port in the UK.
You will also have to check all the insurance and road tax details out. I'm sure they would be able to put you in the right direction if you contact their C&E dept.

You can rent bike's in most places. Passion.net is a great website forms and photo's. They all tour around.
