Has he tried a CPAP machine, has he tried sleeping with the head of the bed elevated? Does he have sleep apnea? Has he had a sleep study done? I would get a second opinion. Even consult with an accupuncturist. They do more than just put needles in you. His snoring may well affect his heart and it can affect your health, too, with the sleep deprivation. Maybe stay in the room with him until he is asleep (get your snuggles in) and then sleep in the room with the infant. At least until you figure out something that will help. I wish you the best. I've heard that "Breathe Right Nasal Strips" work really well...
Other then that:
What I do with the same problem is hook up an air purifier right next to my bed. The noise covers up the snoring- Just make sure your baby monitor is on full blast to ensure you hear your little one.

Try the nose strips or throat spray. You could try ear plugs, but since you have a baby that isn't ideal. Maybe you should sleep in the baby's room until it can sleep through the night.
Or have your husband sleep on his stomach, that helps my husband.

We have tried everything: sleep clinic, nasal strips, surgery, head of bed elevated, etc. Short of strangling him, separate bedrooms (with visiting privileges) are the answer. Good luck!!

It could be related to his heart. Does he have high blood pressure? This is a very serious situation. I'm surprised that your doctor gave up so easily, and expressed a nonchalant attitude. I would seek another medical opinion.

get him some of those breath right strips for snoring..they actually do work..and they also have the spray
