I'm voting for Catherine, as I'm a Katherine Elizabeth! I hated being one of six Kate's in high school, but I don't think that will be a problem with the way naming trends are going. I used Kate as a teen, but when I was small, my family called me Katie. Some people I work with call me Kaye, too, so she'd still have nickname options.
Elizabeth Mary is also very nice. It has a lot of nickname options, (and Elizabeth is my middle name *wink*), but I can't stand the nickname Lizzie or Liz. They make a beautiful name sound so gutteral and icky. I love Liss, Beth, and even Betsy for nicknames.

I agree with you that more traditional names sound better. Of the two you have I prefer Elizabeth Mary, but I like the middle names swapped round - Elizabeth Anne and Catherine Mary. Or Mary Catherine would also be nice (I think Mary is really underused).

Elizabeth mary is a cool name but I think it is not as sophisticated as Catherine Anne.
