If you are participating in sports for fun/fitness/etc. and not so you can get a sports scholarship, it is not really going to matter if you tried out different teams during HS. If you're trying to get a scholarship to play a specific sport, you should stick with the one you are best at.

Extracurriculars are only ONE part of your application to colleges. Remember that grades, test scores, and letters of recommendation (if requested) play a far greater role in the admissions decision for most students. I say "most" because there are some cases in which a special skill or talent (i.e. sports) will play a big role.

Depends on where you want to go to college. If you hope go to a Division I or II school and get a sports scholarship in either tennis or cross country, your best bet is to stick with one of those for four years and get really good at it. If you want to go to a Division III school, they are not allowed to give sports scholarships and you might even be able to do both sports in college. Colleges like to see that you are dedicated, but switching one sport won't make a difference. You can show that you are dedicated in other ways, such as track, like you mentioned, being part of a club, or getting consistent good grades. The sports won't be a factor in your acceptance into the school unless you are recruited. If playing in college isn't that important to you, then play both in high school and enjoy it.

Since you are doing track for four years, switching from cross-country to tennis should be seen as just fine. You don't have to stick with everything for four years.
