First off, a band or a lead singer of a band, or a singer that doesn't play any instruments, in my opinion, doesn't qualify as a musician. So, some of these answers don't count. (Again, my opinion only.) Oh, and I agree, rappers are NOT musicians.
Having said that, I would include David Grisman, Jerry Garcia (of the Grateful Dead), Dave Matthews, Dan Tyminski (of Union Station with Alison Krauss), Jimi Hendrix, Jeff Beck (of the Yardbirds and others), Steve Vai, and Eric Clapton. Mind you, this is just a partial list of favorites but if I had to choose one above the rest, I'd probably pick Joe Satriani. If you have any questions about him, just check his album/cd "Surfing with the Alien."

I have a TON, but here are the top 5:
-Rascal Flatts (country)
-Daughtry (soft rock, I guess)
-Josh Groban (classical-ish)
-Carrie Underwood (country
- John Williams (soundtrack) (Star Wars, Harry Potter etc.)
Yep, I like a variety of music, but no rap or hard rock or emo stuff (I agree, rappers are NOT musicians)

If I have to choose, I guess I would say Cat Stevens (Yusuf Islam). I never get tired of listening to him. Mama Cass is right up there too.
