Because hot objects will heat the air in the balance chamber, leading to convection currents that will "move things around."

Because the warmth of the object being warmer than the surrounding air can develop air currents which swirl around the object. With a sensitive balance, these current movements have an effect on the downward pressure of the object on the balance pan.

because with some objects heat could cause the object to expand adding volume and mass.
