The best games out for the PS3 are:
Resistance Fall of Man
Heavenly Sword
Motorstorm
Ninja Gaiden Sigma
Rachet and Clank Future Tools of Destruction.
The PS3's exclusives are really the best because they use more of the PS3's potential because developers work to develop the game only for the PS3 and they put more work in the game to bring out the best.

Thats a tough one there are other good games but for me its between Resistance FOM an awesome shooter like Halo meets Call of Duty,Motorstorm the awesome burnout style rally game and Heavenly Sword the best sword game bar none(it even beats god of war and Ninja Gaiden).
If I had to decide Id probably go with Resistance ,Heavenly Sword is a better game but its too short and theres no multiplayer.
