They do this because you can not wash a cast iron frying pan in water as it rust so they use salt to clean it as this does not rust and you do not need any water to clean plus it removes the food and absorbs the oils, hope this help explain your question of why people do this type of cleaning Good Luck !

Cast iron pans will rust, so salt and oil only. The salt is a preservative so the oil won't get rancid, and also makes the surface slicker.

For old-timey iron skillets, it's to keep it from rusting. It preserves the black-patina finish that chef's enjoy using. I have an iron griddle, and I wash it occasionally with warm soapy water; but I always rub it down afterwards with a paper towel and vegetable oil. Oil keeps the metal from rusting and preserves the finish.

It soaks up the excess oil and makes it easier to clean!
Then you may scrape the salt into the trash and not down your drain causing a clog. I learned this trick from a plumber after clogging the drain one too many times! Works for me. Silly plumber, he doesn't get my money anymore.

(As for the cast iron pots, I always used to wash mine and apply oil after. Never had rust!)
