They want the gland at the base of the brain stem which in ancient times was supposedly the the source of eternal life. Being that the zombies are essentially dead and only hanging on to life by a tread they thirst for this gland and the steroid it produces.....

I read somewhere once that someone wrote a book about movie zombies that had details of how to survive a zombie outbreak and do's and don'ts of dealing with zombies. Somewhere in that book was an explanation of zombism and the brain thing. The book said that a special virus caused zombies. It attacks the central neverous system and causes it to mutate, especially the brain. The rest of the body dies but is still animated due to special enzymes produced by the mutated brain and nervous system. The brain can survive without oxygen now but it still needs nutrients. The only way to get these nutrients is to eat the brains of the non-infected. The digestive system does not work anymore but the brains are chomped up and swallowed anyway and the nerve endings absorb the nutrients.
That is the way that I remember reading it. I don't think that this is covered in any of the movies but it was an interesting idea.

Like someone else said, th zombies in Dawn of the Dead didnt crave brains. That was Return of the Living Dead. And the idea that they crave brains i believe was that fact that if your destroy the brain of a zombie they die for good. So, by adding the need to feed on brains heightens the brain being the overall most important thing in zombie genre.

Sombody already answerd the obvious zombie movie mistake. The dawn zombies crave flesh in general. return of the living dead zombies eat brains as a pain killer. plus its funny. Mmmm, Braaaiiinsss, drool,drool,drool..

It is a freudian/psychological thing...the person who thought of this plot has no brain, so the zombies are craving them since there creator lacks this particular nourishment...LOL!
