what are the chances of something crashing into the sun and having an impact on earth

or something big enough to wipe out the sun, what would happen and how long would it take before we felt the effect

Pretty damn low.

In a couple of billion years the Andromeda Galaxy will collide with the Mliky way and despite there being hundreds of millions of stars in both galaxies it is estimated that there will only be six collisions during the merger.

Pretty much the only thing that could crash into the Sun and then effect Earth would be another star. And that's not going to happen - stars are really really far apart. If a star were the size of a basketball and sitting in Boston, the nearest star would be a basketball in NYC. Really really far apart.

If the Sun were wiped out, it would take us 8 minutes to notice. That's how long it takes for the light from the Sun to reach the Earth. Then it would start to get cold.

Practically zero. Most all of the large objects have stable orbits and it would take a small planet sized object to affect the sun that much. The sun wouldn't notice it, but it could conceivably cause some sort of discharge.

The sun is really just a giant fireball, so it would be pretty hard to destroy, however, we feel the effects of things like solar flares so your scope is just a bit off.
