Moisten some cow pies and throw them against the wall!!
Just kidding:
Go to Home Depot and get some of that wooden cedar siding and attach it to the walls. Would look great and cedar has a very nice wood aroma.
I love your creativity. Should be a fun room!!

Some day people will comment on your manners and say "Were you brought up in a barn?" and you will certainly have a snappy comeback for them.
The more the planks look like a barn the more rough edges there will be for you to get splinters on and to snag things onto. Maybe you can just go part way up the wall (like a wainscoting) up to a chair rail and leave the rest of the wall smooth.

If they're regular painted walls, the most practical thing would be paint. You could paint the planks, paint tools hanging on the walls, even paint a door or window with an outside scene.
You could install wormed out panelling, and hang real rusty tools and bridles on the walls, but I would never put that in my house because of spiders, dusting, etc.
This isn't a good project for everyone, but I'm an artist so it's the first thing that came to my mind...

I bought a picket fence already made the width of the bed and use it as a headboard. Then I took white rough wood and make it look like a barn door and hung it on the wall. Its about 3' X 4'. Paint the wall a color you like, like barn red, get some chair rail moulding and run around the room.

I used this effect in a bar remodel.
I went and got old used fence pickets from a fence company, cost free!!
We cut and attached them to the walls to create different patterns. Covered the walls with old signs, pieces of horse tack, horse shoes, etc. only spent about 100 dollars at yard sales for a few of the nicer items. most of the stuff we got donated or found at one of the guys barns.

Have used pre stained "barnboard" i got in a home center some years ago.
Real wood ,It came in a few colors in random widths x 8' long.
Even made cabinet doors out of it.
Was not that pricey considering it was prestained & I believe it ended up cheaper than using rough sawn lumber.
A lot cheaper than the real thing.

They make wall paper that looks like planks of wood. Log cabin look, weathered wood, pine planks etc. Type "wood wall paper" in Ebay or Yahoo search.

the easiest way may be to put up paneling, and this would also be easy to remove later. just tack it up with the minimun nails necessary. the link below shows a product available at Lowes for not very much money, and a picture of a bedroom...

I would use pine boards. If you find your room a bit dark after you put the boards up you can whitewash them.(some barns are whitewashed).
