I am a big fan of Lionsbrand.com. they have good patterns, and they have all the supplies. I like knitting in the round, from the top down, on four or five needles. There are many good patterns out there. here is a reasonable beginners idea, use larger needles, and knit in the round, using worsted weight yarn. While knitting in the round with four needles seems difficult, the reality is that you are only knitting with 2 needles at a time..

My first socks were from "New pathways for sock knitters" By Cat Bordhi. I like doing toe up personally. And skip the double pointed needles, you can knit them using one long circular needle. I am knitting a pair right now using Austerman Step yarn on size 2 circular needles length 32. The book shows you how to knit socks on circulars. Also, go to your local yarn store (google to see if you have one) and they can help show you how.
If you go to diy.com and look for the knitty gritty show. There is a pattern for coriolus socks by cat borhdi. Those were actually my very first socks. Free pattern! Use ebay to get your yarn and needles cheaper. I love addi turbos!

Usually it's the thinnest stuff available like baby or sport weight, and you go with size 2 or smaller double pointed needles. But as the other person suggested, check your gauge against the pattern you are using as well as what it says on the yarn label.
