There are certain messages about modern American life that are conveyed through particular forms of entertainment; Though it's hard to say exactly who is conveying them and if the idea behind all these messages are "mainstream" or if they somehow actually counter mainstream ideas.

In what ways would you say those particular forms of entertainment reflect our assumptions about cultural values, and then make us challenge/question our additudes about race, class, or gender?

Most cultural depictions of society are from the viewpoint of mainstream media as you have stated. No one particular person or group of individuals has dominance over the entertainment industry. Basically there are representations of many people and their ideas. I will simplify this by stating these words. Money Talks. If you have enough of it you can influence what is shown on what form of media and where, the majority of the time; however there are many exceptions to the rule.
