I know there is alot of pressure built up while the wate main has been off. Do i open ALL faucets in the house and let them bleed before turning water main back on? DO I only do a few? Should I flush toilets before turning water main back on?

there should not be any pressure build up if the valve was closed completely, if you are worried open the valve slowly with a faucet cracked open

no pressure has built up, if the main was turned off, turn the faucet at the highest point on, turn water on, let air bleed out to highest faucet, then bleed others, and flush toilets [don't forget the hot water heater, ] turn on both handles,

open up kitchen sink valve and that's all.
