stalling flooding .choking?

1995 gmc serria 350 injection it stalls like it`s flooding ,bad in cool temps i hit the gas smoke then she will go good for days or longer then bam,

Sounds to me like its the coolant temperature sensor located next to the water inlet on the intake manifold.I had the same problem you described on my Chevy pickup changed that sensor and the oxygen sensor and it fixed it.

Just a guess but sounds like throttle position sensor may be sticking
