Because gold is too rare & expensive!

Back in the old days copper was a very workable metal, the main reason for using copper was it goes green when it oxidises, usually the only people wealthy enough to use copper were the the churches, so properties with green roof were tax exempt, that no longer applies or copper would be more expensive than gold.

PS I made that up sorry I don't know.

Copper is often used on flat roofs where more common methods would tend to leak. Copper also lasts a lot longer than conventional roofing materials.

On the other hand, it's a whole bunch more expensive.

Copper is very unreactive.
It doesn't corrode much and so lasts a long time.
It does take on an attractive 'patina`.
It's expensive and thus acts as a status symbol.
