Ur right on th money, u could go with a 600 or a 650 cfm but not more because ur motor is stock, it will be a different story if it was not stock, and i just dont mean the headers or exhaust, even though it will help.and yes u will notice some change but not sure about drastic, to get that you will need to do a lot more which also means more money.

I'd stay around 600-650 for a basically stock motor in something like a spreadbore Holley, Edelbrock or Q-Jet and vacuum secondaries...much better throttle response and gas mileage. You'll see a pretty good jump in full throttle performance from a 4 barrel and a spreadbore carb gives you throttle response like a 2 barrel. There are formulas out there to determine the most CFM's an engine will flow but they have so many variables to choose from, it's not always accurate....experience is the best gauge.

There are several ways you can go about this. Depending on your budget, you can spend as little as $200 to upward in the thousands for fuel injection.
Speaking in upgrades, generally you are looking for a 4 barrel carb and intake. You could go to a wrecking yard and purchase for a few hundred dollars but be subject to extra costs in repairing or overhauling the carb and such, which leads us to upgrade 2. Many of your major parts stores carry packages (new) that vary from $400 to $800 for a nice intake, carb and air cleaner. Get a book to help assist your conversion and an average guy with average tools can do this in the driveway in a day.
Good luck!

I would go with the 600CFM carb that you were thinking about and stick with the edelbrock as they are good carbs, basically take them out of the box and put them on and go and I would go with the edelbrock performer RPM intake manifold it will give you good midrange power (1,500RPM to 6,000 RPM, you will see a performance difference but not drastic until you add a set of headers and a good high flowing exhaust.

me , i would stay with a quadrajet carb. Cheaper and will have less problems down the road. Order one for a 69 chevelle 350 . Cost about 150. You will also have to change exhaust manifolds so it can breath.

this is a 2bbl motor so the heads have small runners and valves...
a 650 is the max your heads will use well..
even if you were to install a larger cam & headers
