There are so many fun, places for you to stay, that will cost you very little. Look here for the perfect wedding chapel, or places to have a smaller get together http://www.vegas.cc/las-vegas-weddings.php. And regarding a hotel, you can find some great deals, http://www.vegas.cc/ , try New York New York Hotel, or Treasure Island Hotel and Casino they have some great rates available to you and your soon to be husband. The Paris Las Vegas hotel is pretty Romanic, and I believe you can get a special there as well.
If you want a fun place to go after the wedding, try looking into a restaurant, they are more then accommodating when it comes to a larger party! MGM Grand has a ton of restaurants. Or look into some of the lounge area's in the hotel, there you can sit for free and just have some great drinks? Most often you'll get a better deal on a room, on a Thursday, then you would on a friday or sat.

Jack is right-Pollyesters is great on the weeknights. Oh, if "Thunder Down Under" is still at Excalibur, go see these guys-great Batchelorette party fun-I loved it!
We married on a Friday at Little Chapel of the Flowers, and here´s what we did to keep the cost down on dinner afterwards. Thursday night, we had everyone to our hotel room and served fruit, cheese, crackers, chips, wine, and champaigne and partied in our room. We bought all of this at Circle K close to Stratosphere, and it cost only $100!
On Friday, all of us went to Paris Hotel, they had a hotel band there in the lobby, and they played a first dance song for us-FREE! We all went to the buffet afterwards, and for 14 people, including tax and gratuity, it only cost $500! No one drank-they all drank the night before, so we didn´t have any booze there, and everyone had a great time.
Advice-go to the Paris buffet before you marry and tell the manager how many are coming in Thursday after your wedding. She is very nice, and put us in a pretty room away from the buffet itself.

My recommendation, sight see, eat, buy some booze, go back to your hotel room and party.
