Fun question. Great answers too, unfortunately I really don't have any new tunes to add, but my list is...
Psychodelic - Time of the Season (note: I was totally in agreement about White Rabbit, but when I saw Lovenrckts answer it jumped out at me and when you get into the kind of vibe and what the song stands for I can't see a better choice. Honorable mention in my opinion should go to Tomorrow Never Knows, but I couldn't pick it because it wasn't quite popular enough. It's not one of the tunes that you think of to define the period in a classic sense.)
Disco - totally Stayin Alive
Hair Metal - A few good ones come to mind, but for one choice I would probably go with Livin On A Prayer. Somehow, according to VH-1 and their polls this is the #1 song of the 80s. A total crime, Thriller always wins and that's the way it should be.
Grunge - Another vote for Teen Spirit, although I think it's a shame. That's a very good song, but there are certainly better Nirvana tunes. That was just the rallying point.

Psychedelic - "Slip Inside This House" by the 13th Floor Elevators absolutely takes the cake. One of the best songs ever recorded which id a feat for a song of such a length (8:03).
Disco - "Stayin Alive"
Hair Metal - Never cared for any hair metal, all seems too derivative and contrived, but I suppose "We're Not Gonna Take It" by Twisted Sister fits the bill, or something by Poison.
Grunge - "Smells Like Teen Spirit" is the obvious answer here, so I'm sure it's been said multiple times.

hair metal: Cherry Pie - Warrant
It's the worst thing that came out of the era, but for some reason, it's what everybody remembers... the sex and the cheese. It's a damn shame that the really great songs from that period will never get the recognition they deserve.
grunge: Smells Like Teen Spirit - Nirvana
