If they are Catholic, I wouldn't get them The DaVinci Code! Most likely you'd offend them, which isn't exactly the purpose of a Christmas gift. Honestly, it doesn't matter how well written a book is, if it's a gift and they might be upset by it.
There are books you could get that are just interesting information. Every year I get a book or two for a friend who doesn't enjoy reading, but loves curious information. For instance, 1001 Movies You Must See Before You Die or 1001 Books You Must Read Before You Die or 1,000 Places to See Before You Die: A Traveler's Life List. (There are a bunch of these 1001 books available for different things like gardens, etc.)
You could also get one that has a bunch of trivia like 1001 Things You Didn't Know You Wanted to Know. (There is a whole series of Politically Incorrect Guide To books that are a lot of fun - i.e., Get it. Write: The Politically Incorrect Guide To Writing Professionally: Featuring Perfect Punctuation with Percy Perfect by Sam Seymour.)
You might also consider getting a "coffee table book" like 100 Photographs That Changed the World by Editors of Life Magazine or books with pictures from a particular place that your family members like.
Get something that is more generic and won't offend anyone. Novels can be chancy, because people have all different tastes. Get something unusual and chances are you'll appeal to a greater amount of people.

The problem with giving the Di Vinci Code is that if it doesn't offend their Catholic sensibilities (which it very well might) then they may have read it already. It's not a new book and it sold so many copies that almost everyone who has wanted to read it already has. You don't necessarily have to get a new book, but one as popular as Dan Brown's has probably already been read (or seen on the Silver Screen).
I've heard really good things about the Left Behind series, though I've never read them. They have obvious religious overtones but are entertaining (I've heard). The other good thing about that is if you get them the first book then your next couple of birthday/Christmas gifts will be easier to choose, as you only have to get them the next book in the series. This would also work for Harry Potter, I assume.

I wouldn't "vote" for DaVinci Code or Left Behind. Some people absolutely love Left Behind, but I don't, and have friends and colleagues who didn't like it either. Maybe a lesser known title would be good. I am trying to think of a good recommendation.
Otherwise, I like The Kite Runner, but it is a couple years old now, and the movie is coming out. It may be a little controversial for religious people, but it is SUCH a good book.

Get "Life of Pi" by Yann Martel. This book is wonderful and does not cater to one particular demographic.
I have yet to meet a person who read it and did not like it.
