I need to know the name of the type of poetry where you take a word and write it vertically down the page and each line begins with a letter from that word. Such as:

Cute and cuddly
A mouser extrodinaire
Tiger is her muse.

Which has CAT as the base word. What type of poetry is it?

The use of a word or phrase spelled out by the first letters of each line make the poem acrostic. If you pronounce "cuddly" with three syllables, it also doubles as a haiku in this case.

This type of poem is called an anacrostic, or sometimes acrostic.
