I had a great year for my little garden but when it started getting colder, I picked all of my big peppers that would eventually turn yellow, and put them in a window basket. They turned yellow but they are a little soft and withered by the time they do that. Is there a way to sun them so they turn the proper color but are still crisp? Same thing with my banana peppers.

They need to be refrigerated to slow the natural decay cycle. Special vegetable bags were kinda of a flop on the market but they did help keep the veggies crisper longer in the refrig's produce drawer. Still don't expect more than a week or two before they go over to the dark side. Time for pepper stir fry?

they need to be refrigerated, Even then they probably will not last long. Your best bet would be to vacuum seal them. If you have a vacuum sealer or even know someone who has one, this is the only way to keep them fresh.
Peppers generally do not last long once they are picked.
