Dogs bark, they say "woof."
Birds chirp, they say "tweet."
Elephants trumpet, they say "???"

Does anyone know a good way of expressing the actual sound an elephant makes in letters?

This one's difficult, since the greater part of the sound the elephant makes is outside the range of human hearing (lower in pitch). I would describe what we do hear as "eRowrrh!", the sound of a trumpet that's very flat.

It's said an elephant "trumpets" but I don't know how you'd write it.
Edit:
I found this:

In different languages what do we say to mimic animal sounds? Below is the world's biggest multilingual list.

baaa (Italian)

I don't know the answer to this question. However, if you feel like it, you could try posting this in the 'Music' section, so that someone knowledgeable from there could give a better answer!

Hmm... can't say that I do. I'd stick with "the elephant trumpeted" and leave it at that.

"Hreee-uh!"

Although you may want to edit that somewhat.

May God bless you.
