Start by putting your x, y data into a couple columns. For example, imagine you had the following data:
1, 1
2, 25
3, 90
4, 200
5, 450
6, 800
7, 1250

Highlight this data and choose the Chart Wizard (from the menu, 'Insert' > 'Chart')

Choose the 'XY Scatter' type (with a line, if you like). Click 'Finish'.

Now use your *right* mouse button and click on the line. Choose 'Add Trendline'. Choose the type (say, Polynomial) and the order (say, 3). Next click on the 'Options' tab. Check the box that says, 'Display equation on chart'. Click 'OK'.

The result will be a regression line with the equation of:
y = 3.1667x^3 + 7.6548x² - 33.369x + 28

There you go!
