Please understand I am not questioning the "freedom of the press."
I am asking what is the definition of "the press"
What do you have to produce? A publication? A television production?
Or can I incorporate a name, declare that name as a press or news publication then have access to all the rights and protections that fall under "freedom of the press"

You have to own the press.

Today with cell phones that can take pictures and people blogging almost anyone can submit a story or video or blog anywhere to a network or to a magazine or a newspaper and if it's newsworthy be considered a '"citizen journalist".

Freedom of the press means that hopefully no government , military or corporate structure or religious groups gets in the way of you telling the news.

The press refers to the printing press people used when they first started printing books like the Gugenheim bible.

Journalists were also called scribes at one point in history, but got attached as the press because of the printing presses used for printing newspapers and magazines and pamphlets.

No you cannot already incorporate another's name and then have all the rights attributed to that. That is NOT freedom of the press , that's infringement of intellectual property or infringement of copyright.
