In the North Island there is only Mt Ruapehu really for snow, but there are quite a few skifields in the South Island, ie lots around Queenstown and in the Canterbury region.
Just so you are completely aware...winter in NZ in during June-Aug, so if you want snow thats when to come.
There are some places that have snow all year round, but its pretty hard to get to them.
As for lakes and mountains well there are more in the South Island, so I guess thats the place to go. I would say Queenstown or Wanaka would give all 3, but they are VERY popular, but for good reason.
THe West Coast ( south Island) has some stunning scenery, views of mountains and lakes ( no snow unless looking at it on the mountains).......wonderful...you could go on a glacier walk at Franz Josef or Fox Glaciers....another option for the "views"is Mt Cook ...has some stunning views and VERY different from just on the other side on the West Coast.
Fiordland is wonderful!! THere are some tramps you can do, but some of them are not for winter time ( its pretty isolated here!!!)

i've lived in queenstown for 7 years, so ive done alot of skiing there. personally I think that coronet peak ( 15 minutes drive from queenstown town center ) is the best mountain, and there are also first tracks passes for $30 here, which means you can ski from 8-9 o'clock without any speed limits or snow patrol on your back.
I also ski alot in wanaka, which has two great mountains, cadrona and treble cone.
if youre coming to new zealand, skiing or not, you must come to queenstown, the tourist destination capital of new zealand for great views, the fresh air and other attractions such as the shotover jet, the gondola/luge and of course the skiing!!!

Nelson would be just perfect. warm enough in Summer for the beach . you have plenty of sailing . The nelson lakes are not to far away where you can canoe or Kayak. There is an abundance of walking tracks. You have the Abel Tasman National park at your door. you can fish and you can ski in Winter some mountains for skiing not far as well.

The south is the best place for the snow
Queenstown is known to be one of the most beautiful places in New Zealand, and its a great place to hit the ski fields etc, also in the south you could go and visit Wanaka, it has a really beautiful lake, and really calm atmoshpere

Nelson - top of the South Island. http://www.nelsonnz.com
Rainbow Ski Area - St Arnaud, Nelson Lakes, an hour and half drive from Nelson http://www.skirainbow.co.nz
Nelson is the sunniest place in NZ and awesome. I remember in October we used to go snow skiing in the morning then water skiing in the afternoon as it's warm enough.
Lake Rotoiti in St Arnaud is a popular area all year around.
