I am not certain - but I believe that there is such a book on display in the library at Trinity College in Dublin, Ireland. I am sure that I saw a manuscript there by Copernicus, and I believe Galileo was represented as well. Certainly it is worth the trip for the Book of Kells, which is also on display, from the 5th Century or so..

Fascinating.

Do you read Latin, (probably not) since that was the language he used?

I am sorry you probably can't find any books written by him that are still in print, you will have to settle for books about him that quote him like this list from Amazon.com:
