No, no, no and NO!
I'm one of the rare combinations of football fans and vegetarians in the country and this would be an aberration to both things I deeply care about.
Since when should the NFL ever get itself involved in issues that do not directly or indirectly affect the NFL or football in general!?
As for the "pigskin" comment, balls haven't been made out of pigskins for years, and in fact, unless you play in the NFL, you will probably never touch a leather surfaced ball in your entire life. Most footballs are made from synthetic materials.
Yes, you can be vegetarian (and even a vegan) and a football fan. Do you eat giant steaks out of a bag when you're watching the game or do you eat tortilla chips and salsa?
Do you drink pork juice when you watch the game or do you drink beer?
Most likely, you eat and drink very vegetarian foods and beverages when you watch the game, it's just that you don't think of them being vegetarian because they're horrible for you.
Again, the NFL doesn't need to dedicate a day to vegetarian issues because we don't have NFL days dedicated to shrimp fishermen or to mountain biking. The NFL has other things to do with their time.

You should have expected to get bashed for asking a question like this... where's the association??? There is none period. Football players and football fans are MEAT eaters plain and simple. How bout this... we could set up two teams one team will be all vegetarians and another team with all meat eaters... we can all watch the meat eaters beat the cr ap out of the malnourished vegetarians and laugh as we eat our big fat t bone steaks dripping with little baby calf blood. Man now you got me hungry... i need some flesh to tide me over.

Why would they do that? Football has nothing to do with vegetarians. Neither does any sport for that matter.
Should football have a day dedicated to homosexual issues? Fat guy issues? Meat eater issues? Toenail fungus issues?

You told me that Mike Flynt, the 59 year old linebacker for Sul Ross State, was a vegan. I don't know about this, but why don't you find out how/if he played in Saturday's game? That's a great way to promote veganism in football, look at how old that guys is? And he plays!
