Sure. It should be better than the cardboard box under the overpass, where you live now.

If you're handy and like the idea of being off the grid, then why not? However, you should probably buy the land you are living on. It takes time to build even a hut, and you don't want your hard work to go to waste when the park rangers come and tear down your shelter.
You may have to wait for those Ikea kit houses to be available in the U.S., but I don't think those houses would meet your needs. They are designed for people living in regular suburban areas, not for the middle of the woods. If your DIY skills are such that you need step by step instructions and an allen wrench, you might consider living like the Mongolians and buying a yurt rather than a wooden hut. If a yurt can keep the nomads of central asia warm in the winter, it can certainly handle your needs in the forrest.

You still have to buy the land to put the hut on, and build an
outhouse, or a septic tank system, since you are going to be
needing some water, in which you will have to drill a well.
You also need to properly, dispose of your litter. We must now
keep our enviorment clean. If you burn it, you will probably
burn down the woods. Don't forget them property taxes.

If you're lucky and manage to stay there for 10 years without anyone demanding you to move, you legally can apply to get the land for free through uncontested use.

You could probably do that in Poland without any problems. They have quite a lot of space there at the moment!
