The function of the others are as follows: Gastrin is a hormone that stimulates secretion of gastric acid by the parietal cells of the stomach, so regulates stomach pH. Secretin is a peptide hormone produced in the S cells of the duodenum to regulate the pH of the duodenal contents. Cholecystokinin is synthesised by I-cells and secreted in the duodenum to stimulate the digestion of fat and protein.
