It is hard to find a comparison table.

says that polyurethane foam has an R value of 7-8 per inch. Another site claims that their latex foam has the highest of all foams, but doesn't give it.

says urethane has the higher 5 vs 4.5 for latex, but they are talking about rigid out of a can.
The things you are talking about, soft urethane and soft latex, the density of the material is probably a bigger factor than the natural properties.
